Soup 'n Pancakes


















A visit to my grandparents always means lots of food and conversation! I had been craving my grandmother's potato pancakes all year so it was quite the treat to finally eat them. We started with a cucumber, tomato and basil salad from her garden. The next course was her borscht, which, I must say, is really phenomenal. It's topped with a dollop of sour cream. Then it was on to the main course, her fabulous fried potato pancakes. She uses 6 eggs and adds salt just before cooking so the juice doesn't all come out beforehand. They are served with her homemade applesauce, sour cream, and several different kinds of herring. She spoke to us from the kitchen because she had to keep a watchful eye on the pancakes as they cooked. Who else do you know that can tell war stories while frying for 5 at a hot stove?

For dessert, she made New York cheesecake topped with apricots.





Her cheesecakes are a favorite
of mind (among cheesecakes) because they are a happy medium between creamy and crumbly.
